I open the -mis file in notepad.exe and run a search and replace for " fov 180" to " fov 360", then save the .mis, and reopen it in the MED. As far as I know, that's the only way to change the field of view on the AIs.
It gets annoyingly tricky if you don't want to change all the AI's field of view, and it's possible that if you change the fov on some items, it may cause a sysdump, but I've never experienced that in my years of editing.
Possibly unrelated: I edited a map once where a group was supposed to have its attack and engagement ranges changed, but since that group had a Little Bird in it, and that Little Bird had either the '.50 cal.' or '.50 cal. and rocket' AI Textfile, the game sysdumped when that event triggered. I may be remembering these details incorrectly.
So, edit carefully and test thoroughly is the moral of the story, I suppose.
